Food Alergies or Intolerances

The term allergy refers to one type of specific reaction to food. In general it refers to the ones that show on the skin prick test ones that are very obvious on the body. However there are a wide veiety on sensitivities and reactions to food that are not classed as allergies at all.Many kids with ADHD have  multiple reactions to food from allergies to  intolerances. The type of allergy we know is the least likely cause of behavioural symptoms. This is the real allergy the one with hives sneezing outwardly obvious symptoms.Kids with ADHD and others more often then not have food intolerances or sensitivities where symptoms are almost hidden. These sensitivies or intolerances are caused by poor absorbtion and poor digestion of specific food related substances. These are called delayed immunoglobulin  lgG  sensitivities. Intolerances can be lactose, fructose other sugars related to carbs, phenols, salicylates ang gluten and even by-products such as opiate peptides from milk/casein, soy, gluten and soy which are related to abnormal digestion.
 The antibodies in intolerances are called lgG antibodies true allergies are lge antibodies. The react in very different ways,  The  testing usually done for lge is the traditional skin prick test covered by  ohip usually performed by gp or allergist.  I had to have a  lgG blood test performed bt a naturopath who sent it to a lab at a cost of 400 not covered by OHIP  although some insurances cover it. There are several option just food, outside sensitivities etc. The more things you want tested the higher the cost.  The will send you a report in bar graph form listinf each item and the level of reaction. From none to very high. In some cases there is no reaction as a result of the food not being consumed.

Allergy free veggie soup

1/2 cup water
1/4 cup yellow split peas
1/4 cup green split peas
4 medium carrots
2 sweet potatoes
2 medium zuccini
2 medium parsnips
1 large onion
1 teaspoon salt
1 teaspoon dried dill
This one is good but not an all time favourite and is a little time consuming. Bring water to boil add both color of peas and simmer covered for an hour. Chop the rest of the vegetabled in to large chunks again i add carrots and sometimes broccolu, Then add the rest of the ingredients and bring to a boil. Then simmer for an hour let it cool and puree. You could even yse a hand blender or processor to blend until smooth.

allergy free carrot soup

Carrot Soup
1 small onion chopped
2 tablespoons ghee divided
5-6 medium carrots peeled and chopped
1 large potato peeled and chopped
15 ounces chicken broth
1.5 cups fresh mushrooms canned will work
1 celery stalk sliced and chopped
1 garlic clove minced
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon thyme
1/4 teaspoon hot pepper sauce make sure its gluten freelots contain gluten
1/2 cup milk or milk substitute i often throw in a lil broccoli

in large pan saute 1 tablespoon
 ghee and onion
toss it carrots and potato for two minytes
add broth
add saly and pepper to taste
add remaining ingredients then let the whole mix come to a boil. Then reduce heat allow it to simmer for just unde an hour.  If your pressed for time there are gluten free  broths and soups already prepared. I have on more then one occassion bought a soup then thrown in few veggies in a hurry. One the hour is up let it cool. Next pour carefully in a blender on medium till smooth, It smells wonderful. Last put not least pour back in the pot add remaining ghee and milk or milk substitute. My son loves a dash of cinnamon on top.
Take a taste and add salt and pepper to taste.

gluten free muffin baking

Suprise  allergy free muffins
heres a delicious recipe designed to trick tne fussiest of kids into eating some vegetables
1 cup finely chopped carrots
1 cup zuccini finally chopped
1 cup chocolate chips or if there is milk allergy use carob chips kids dont even notice
1 cups walnuts or pecans unless nut allergy present then omit
1 package gluten free cake mix found at bulk bin or local grocer glutino is a common brand easily available
Add all the ingredients to the dry cake batter follow instructions i tend to add soy milk because of the added protein and i always add a little extra. You can substitute any of the vegetables or even substitute your favourite fruit. The trick is to chop the veggies small unless your kids are like mine and love veggies. You will find gluten free batters to be heavier and quite stick dont worry this is normal. Fill each muffin cup to about two thirds  Bake at 375 for about 20 minutes or until a knife comes out clean. Dont worry they wont rise as much as regular muffins. Take them out and let them cool. I usually bake two dozen variations then freeze them in bags of two. That way i just pop them in he kids lunches. The good thing about this  is you can add anything your kids like even chicken although ive never tried it that way.

ita amazing how our world gas changed. twenty years ago there was no such thing as a gluten free diet. we ate ptreey much what we felt like eating. In those days celiac disease was almost unheard of. Most restaurants and food producers rarely acknowledged gluten free products .In those days it as very hard if you needed gluten free diets. However slowly over time with the ever increasing demands restaurants food industry saw money making opportunities and here is where we are today. There are nob books, frozen meals, mixes, baked goods even pizza that are all geared to the gluten free diet,
These days celiac disease or gluten intolerance or disease  are now a widely reckognized llegitimate lifestyle. Universities such as Harvard , Columbia and Stanford and others developed celiac centres. The mayo clinic in rochester is a well known center. the NIHceliac conference made groundbreaking forward movement in defining and diagnosing this difficult disease. there is a web site http://www.celiac.nih.gov/ which has been designed to heighten both the public and professionals knowledge of gluten issues. Todday cruises restaurangs carry and serve specialized meals. now there is a large selection of gluten free ready made products even bread mixes and yummy donus. the gluten free market grows on average 20 percent a year now its worth
well over 300 million mark.Thanks to The american celiac disease alliance along with others the put into place the food allergy labeling and protection act  of  2004 where manufacturers must now identify the eight major food allergies in pain lamguage including wheat where gluten comes from on anything after january 2006. however barley, kamut rye and spelt and triticale can still be present and still contain gluten but they still will be listed under the ingredients. weve come a long wat but we are out best advocated we must carefully  read every label.

alternatives to milk

AVGJBZYQ44RQ  in todays market there are many milk or dairy free alternatives. these days you can get a variety of flavours and types of milks even prepackaged ideal for lunch boxes, there is soy milk, goat milk and yogurt and cheese, soy yogurt, soy pudding, soy ice cream, soy based foods, rice milk and cheeses, oatmeal milk, help milk and protein powders and almost everything from food to clothing to shoes made from hemp. there is also potato and walnut milk but hard to find. allergies are becoming so commonplace
they even sell machines to make your own soy milk but its labor intensive store bought simplier
for bust moms.

here is a great mornung recipe fro eggs bennedict
1 package coardely chopped chives can used dried
3/4 cup of extra virgin olive oil
1 tablespoom cider vinegar
8 large eggs
8 slices gluten free bread storebought
1/2 teaspoon table salt can use sea salt as well
1/2 teaspoom pepper freshly ground tastes better
paprika if desired as a garnish
put your chopped chives and oil in the blender for a few minutes then set it aside
bring 4 cups salted water to a rolling biul then add the cider vinegar
now reduce the heato a simmer now your ready to cook your eggs. i have found through experience crackink no more then two eggs at a time has better results. i also found works much better if u crack those eggs into a bowl then into the boiling water. once  you slide the eggs into the boiling water  just wait until there cooked the way you like them. place two slices of gluten free bread on each plate we toast ours
gluten free bread is not tastiest and toasting helps, place an egg on each piece of bread then drizzle with the oil mixture sprinkle with paprika. we serve this with a glass of soy milk and sliced fruit any kind will do, its a great wat to get protein into adhd allergic child it improves there morning concentration. .

there are millions of us with gluten allergies.it makes everything we eat very important.
our health is important,so in some of these cases its important to prepare our food at home to ensre its safety.Preparinglicious gluten freemeals at tnhe end of a long day can seem an overwhelming task to anyone.
so as a mom having gone through this i am posting the few hundred easy reciepes approved by my son. ive tried thousand to be demmed horrible or brick like and theregore these reciepes are trashed. if other kids dont know its gluten free and it passes the taste test its in the files.
first things the principles, first thing is t use commercially prepared foods  and intenseley flavored ingredients
which will minimize the ingredients and therefore the steps required.using mixes, appliances as innovative time savers, utting edge techniques and appliamces as time savers such as bread machines now available with a gluten free setting, maximize meals and resources make double batches, use partial ingredients of one for part of ingredients in next. freeze portions for next time when u can . searcg your local grocery store i found lots of products at local superstores and even more on line,

adhd and food allergies

KIDS ALLERGIES ever wondered why  some of our  kids are so hyper excitable and often moody even uncontrollabe at times. do they sometimes  have red cheeks  for no reason or have dark circles under there eyes when theyve had lots of sleep or even the occassional hot red  ear  with no real sometimes even gasy even when there asleep. Allergies, your adhd child may be intolerant  or even allergic to milk gluten or others foods. although not a trur allergy it can be an intolerance a difficulty provessing the proteins in certain food which yes can affect
behaviour and moods. Allergies as i had believed caused physical symptoms real obvious ones rashes stomach upset hives etc.  my first clue was the intense cravings my son had for these foods especially carbohydrates and dairy products and blueberries they affect the brain function causes stimulus therefore cravings like smoki ng almost i found once i removed these foods the temperment calmed substantially .
To confirm what i believed i had to do lots of research first the old fashioned arm prick allergy tests. no reaction strange i thought. then i was advised to get naturopath to do more specific tests believe its called gn testing not covered by hope. it showed reaction to all of the above its called intolerance an allergy common to adhd kids. they have difficulty processing certain proteins which causes under production of brain elements and yes can affect moods behaviours.adhd allergies yes its not so much of a myth to us moms

if your son or daughter has trouble staying seated or wiggles get a door snake instich one end fill it with beans place on their lap it provides sensory input to the brain helps them fidget less not for everybody but it worked for my son

there is soy milk original, vanilla,strawberry, chocolate  also oatmeal milk rice milk oatmeal milk goat milk potato milk and hemp milk i  found all these at my local loblaws

my son is intolerant to cow milk so his beloved cheese is a no no soy cheese mostle have milk products in them called casein rice cheese yuck however most people allergic to cow seem to be ok with goat cheese. it comes in marble only looks feels slices like cows cheese melts but not as well however tastes good.  Its a little pricey but uses are same as cows milk cheese the protein structure is different to cows milk so its much easier to digest making easier on kids with intolerances. i also hace cheese spread recipe using nuts as well
