Food Alergies or Intolerances

The term allergy refers to one type of specific reaction to food. In general it refers to the ones that show on the skin prick test ones that are very obvious on the body. However there are a wide veiety on sensitivities and reactions to food that are not classed as allergies at all.Many kids with ADHD have  multiple reactions to food from allergies to  intolerances. The type of allergy we know is the least likely cause of behavioural symptoms. This is the real allergy the one with hives sneezing outwardly obvious symptoms.Kids with ADHD and others more often then not have food intolerances or sensitivities where symptoms are almost hidden. These sensitivies or intolerances are caused by poor absorbtion and poor digestion of specific food related substances. These are called delayed immunoglobulin  lgG  sensitivities. Intolerances can be lactose, fructose other sugars related to carbs, phenols, salicylates ang gluten and even by-products such as opiate peptides from milk/casein, soy, gluten and soy which are related to abnormal digestion.
 The antibodies in intolerances are called lgG antibodies true allergies are lge antibodies. The react in very different ways,  The  testing usually done for lge is the traditional skin prick test covered by  ohip usually performed by gp or allergist.  I had to have a  lgG blood test performed bt a naturopath who sent it to a lab at a cost of 400 not covered by OHIP  although some insurances cover it. There are several option just food, outside sensitivities etc. The more things you want tested the higher the cost.  The will send you a report in bar graph form listinf each item and the level of reaction. From none to very high. In some cases there is no reaction as a result of the food not being consumed.

Allergy free veggie soup

1/2 cup water
1/4 cup yellow split peas
1/4 cup green split peas
4 medium carrots
2 sweet potatoes
2 medium zuccini
2 medium parsnips
1 large onion
1 teaspoon salt
1 teaspoon dried dill
This one is good but not an all time favourite and is a little time consuming. Bring water to boil add both color of peas and simmer covered for an hour. Chop the rest of the vegetabled in to large chunks again i add carrots and sometimes broccolu, Then add the rest of the ingredients and bring to a boil. Then simmer for an hour let it cool and puree. You could even yse a hand blender or processor to blend until smooth.

allergy free carrot soup

Carrot Soup
1 small onion chopped
2 tablespoons ghee divided
5-6 medium carrots peeled and chopped
1 large potato peeled and chopped
15 ounces chicken broth
1.5 cups fresh mushrooms canned will work
1 celery stalk sliced and chopped
1 garlic clove minced
1/2 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon thyme
1/4 teaspoon hot pepper sauce make sure its gluten freelots contain gluten
1/2 cup milk or milk substitute i often throw in a lil broccoli

in large pan saute 1 tablespoon
 ghee and onion
toss it carrots and potato for two minytes
add broth
add saly and pepper to taste
add remaining ingredients then let the whole mix come to a boil. Then reduce heat allow it to simmer for just unde an hour.  If your pressed for time there are gluten free  broths and soups already prepared. I have on more then one occassion bought a soup then thrown in few veggies in a hurry. One the hour is up let it cool. Next pour carefully in a blender on medium till smooth, It smells wonderful. Last put not least pour back in the pot add remaining ghee and milk or milk substitute. My son loves a dash of cinnamon on top.
Take a taste and add salt and pepper to taste.
